After a year of pause, PanKairos returns.
Pane – Kairos: two words that together express an idea, a vision — a time to be savored.
Celestino Gaspari chose to pause, reflect, and resume the thread of a historic recipe known as Offella, reinterpreted in a more essential, authentic, and everyday version — closer to the concept of bread — and then enriched inside with a reduction of Kairos wine, a symbol of the complexity and harmony that have always inspired Zýmē.
Thus, PanKairos is born: a meeting point between tradition and transformation, between sweetness and structure, between the fragrance of bread and the depth of wine.
In this renewed edition, the journey continues through a collaboration with Vanna of Madamadorè, a pastry artisan who embodies the evolving art of the small, handcraft bakery — where time, skill, and care reclaim their place at the center of creation.
It is an encounter of sensitivities: the one who kneads and the one who vinifies, both guided by the same pursuit of authenticity and the beauty of doing things well.
As in wine, so in PanKairos, the yeast becomes a symbol of Zýmē’s creative process:
it extracts, transforms, defines, expresses.
It is the invisible force that gives shape to matter, transforming time into taste, research into experience.
