If you stick to vineyards with controlled designation of origin status, you’ll never come close to understanding this wealth of variety. Zýmē, on the other hand, has a scattered structure, with a patchwork of vineyards and fields stretching for over seventy kilometres, from the classic Valpolicella zone, through the lands of Soave and Durello, all the way to the gentle slopes of the Colli Berici.
It’s a kaleidoscope of varieties, soils and microclimates that provide a remarkable winemaking vocabulary, one to be protected and enhanced. Harlequin and Kairos, each made from a minimum of fifteen grape varieties, speak this language.
