Perched on the hills above Sant’Ambrogio, in the heart of the Valpolicella Classica zone, “Terre della Grola” is an extension of Zýmē. It’s an ambitious project, one where time almost stands still.
Vines trained with the pergola system, olive trees and native flowers surround the farmhouse dating back to the early 20th century which has been painstakingly restored to create a corner of paradise in Valpolicella.

The Drying Room

In the silence of the “Terre della Grola” drying room, our selected grapes lie on traditional bamboo mats. A gentle breeze caresses the grapes, concentrating their sugars and their flavours while they wait to be transformed into a thick, sugary juice like no other. Ritual, transformation, art that is perpetuated year after year in subtle equilibrium with the breath of nature.

To tend to our grapes, we balance ritual, transformation, art and nature.
