The union of human involvement and the power of nature, the whole winery is a journey of discovery of the ideas underlying Zýmē’s ethics and philosophy.
The main five-sided building where visitors are greeted and which houses the wine shop is the physical representation of the very idea of wine: mankind, vines, soil, water and sun are the five vital elements without which none of this would be possible. The barrel cellar obtained from the old quarry and using its own stone as walls is the embodiment of a circular philosophy that gives back to mother nature what she has created.
