Why Zýmē?

The name Zýmē comes from ancient Greek and means “yeast”, a vital element in the winemaking world, but also a symbol of natural processes and the concept of “ferment”, understood as a continual process of change.
Guided by this philosophy, the winery logo shows a vine leaf with a pentagon drawn inside it symbolising the five main elements necessary to produce wine: mankind – vines – soil – water – sun.
