Five elements, five veins conveying sap to the vine leaf, five fingers on a person’s hand: a powerful connection between nature and human endeavour. Wine is the outcome of this symbiosis: born of the sap rising up from the earth, it takes shape through the dedication and mastery of the hands that make it.

Greater eco-sustainability in our farming practices

We use farming practices that respect the environment. From the choice of grape varieties to soil management, every step of the production process is designed to reduce our environmental impact to a minimum and preserve our local biodiversity.

Respect for nature’s rhythms

Wine is the product of the vine and human endeavour. Winemaking requires knowledge, time and patience. We follow the natural rhythms of grapes without forcing anything. From harvesting the grapes to aging the wine in the bottle, we let every step take the time it needs. That’s how we make wines with real character that speak of our land and our philosophy.

Readability of our wines

A great wine should be able to be “read” like a good book. Every sip should tell a story, revealing its origin and its soul. Our wines are complex but balanced, with aromas and flavours that harmoniously melt together. They’re a sensory experience that titillates the palate and the mind.

Balance of elements

Mankind, vines, soil, water and sun: these are the five vital elements for winemaking. Zymè is the thread that binds them together, creating perfect balance. Each element has its role to play and each step of the process is carried out with the utmost care in order to create wines that are the expression of the synergy between humankind and nature.

It’s all about metabolism

Metabolism is the key to understanding the life of vines. Every process, from blossoming to the ripening of the grapes, has its own rhythm and its own rules. Knowing and respecting these rhythms means allowing the wine to develop its own identity. That’s why we avoid invasive interventions and give the vines the space they need to express themselves.
