Description: The olive grove is planted on 1.15 hectares in the commune of Illasi, near Verona.
The hillside is at an altitude of 150 metres, facing east, with pebbly, chalk-rich soils, and little clay marl.
Varieties: 50% Grignano, 48% Favarol, 0.05%, Piangente, 0.05% Leccino, 0,05% Canino; 0.05% Taggiasca.
The trees range in age from a minimum of 35 years to over 2 centuries. The ground is cover-cropped and dry-farmed;
the trees are trained in the traditional style, and are given an annual pruning and organic fertilisation.
Harvest period: Hand-picked at the beginning of invaitura, or ripening period, in the first ten days of November; the olives are crushed at the end of each picking day.
Production and yield: Olive yield, varying from year to year, ranges from 15 q/h to a maximum of 60 q/h, with the resulting oil from 8 to 13% of those amounts.
Sensory profile: Crisp, clean-edged varietal aromas emerge, evolving smoothly into an appealing elegance, both on nose and palate; it features a wonderfully long finish.
Serving suggestions: A delicious partner with both fresh and cooked vegetables, grilled meat, soups, etc--simply drizzle directly on dishes just before eating.
